Uses : 苯甲酸鈉是酸性防腐劑，在堿性介質(zhì)中無殺菌、抑菌作用；其防腐最佳PH是2.5-4.0，在PH5.0時5%的溶液殺菌效果也不是很好。苯甲酸鈉親油性較大，易穿透細(xì)胞膜進(jìn)入細(xì)胞體內(nèi)，干擾細(xì)胞膜的通透性，抑制細(xì)胞膜對氨基酸的吸收；進(jìn)入細(xì)胞體內(nèi)電離酸化細(xì)胞內(nèi)的堿儲，并抑制細(xì)胞的呼吸酶系的活性，阻止乙酰輔酶A縮合反應(yīng)，從而起到食品防腐的目的。
